چکیده:
مقدمه: مقدار زیادی از محصولات کشاورزی در مرحله پس از برداشت به علت کم توجهی به اصول نگهداری صحیح فرآورده و همچنین خسارات ناشی از آفات انباری دچار افت کیفیت میگردند، به این دلیل استفاده از ترکیباتی که باعث افزایش ماندگاری میوهها و سبزیها میگردند، اجتناب ناپذیر است. از این رو هدف از انجام این تحقیق بررسی اثر گاز ازن، اسید استیک و منتول جهت حفظ خصوصیات کیفی در گوجه فرنگی است.
مواد و روشها: بدین منظور گوجه فرنگی واریته ارلی اوربانا وای تحت تیمارهای مختلف شامل آب ازن دار(0 و 2 ppm)، اسید استیک(0 و 4 درصد حجمی/حجمی)، منتول(0 ،250 و 500 ppm) و محلولهای ترکیبی آنها قرار گرفت و سپس آزمایشهای لازم شامل اندازهگیری ضایعات وزنی، مواد جامد محلول، قند احیاء کننده، اسیدیته، ویتامین C و شمارش میکروبی کل روی تمام نمونهها و از جمله شاهد انجام شد. پس از 15 روز نگهداری در دمای محیط، آزمایش ها دوباره تکرار شدند و تاثیر اعمال تیمارها بر روی نمونهها در مقایسه با شاهد مورد بررسی قرار گرفت.
یافتهها: استفاده از تیمارها به حفظ مواد جامد محلول کمک نموده، میزان قند احیاءکننده، ضایعات وزنی و بار میکروبی در نمونه های تیمار شده پس از پایان دوره نگهداری کمتر از شاهد بود، همچنین اسیدیته قابل تیتر و ویتامین C در گوجه فرنگی های تیمار شده بهتر حفظ شده بودند.
نتیجه گیری: تیمارها تاثیر مناسبی بر حفظ کیفیت گوجه فرنگی داشت و تیمار ترکیبی ازن- اسید استیک- منتول(در غلظت 500 ppm) از همه تیمارها موثرتر بود.
Introduction: Some of the post-harvest agricultural crops due to the improper maintenance of
products, as well as damages caused by the pests might lose their quality. Therefore, the use
of chemical compounds to increase the shelf life of fruits and vegetables might be
inevitable. The aim of this research is to evaluate the effect of ozone, acetic acid and menthol
on the shelf life and keeping quality of early Urbana Y tomato after harvesting.
Materials and Methods: Tomato (Early Urbana Y variety) were subjected to different
treatments such as ozonated water (0.2 ppm), acetic acid (0 and 4% V/V), menthol (0, 250
and 500 ppm) and combination solutions. Necessary experiments concerned with weight
wasted, brix, sugar content, acidity, ascorbic acid content and microbial tests were carried out
on the samples and the control. After 15 days of preservation in the environmental
temperature, experiments were repeated and the influence of the treatments on the samples
were determined and compared to the control.
Results: The results indicated that the treatment caused the reducing sugar, waste and the
microbial counts to be less than control after the keeping period, while the titratable acidity
and ascorbic acid content in tomatoes were preserved better.
Conclusion: Treatments affected the quality of tomatoes and the combined treatment; ozone,
acetic acid and methanol at 500 ppm exhibited better effect.
