مقدمه: اقلام مختلف ادویه و چاشنی، منشاء گیاهی داشته و مستقیما یا پس از فرآیندهای ویژه جهت ایجاد عطر، طعم و رنگ در مواد غذایی از دیرباز بکار می رفته اند. آلودگی های میکروبی گیاهان ادویه ای مانند اکثر فرآورده های کشاورزی یکی از مهمترین چالش های حوزه سلامت و بهداشت می باشد. این مطالعه با هدف بررسی وضعیت آلودگی ادویه های بسته بندی و ادویه های عرضه شده به صورت فله و فاقد بسته بندی در استان زنجان صورت گرفته است. مواد و روش ها: تعداد80 نمونه از ادویه های فلفل سیاه، فلفل قرمز، دارچین و سماق به طور تصادفی از مراکز عرضه کننده و فروشگاه های استان زنجان جمع آوری شدند و آزمایشات لازم برای بررسی حضور اسپورهای هوازی انجام گردید. یافته ها: میانگین شمارش اسپورهای هوازی برحسب CFU/g در مورد فلفل قرمز 107×6/ 1، فلفل سیاه 106×6/6، دارچین 104×3/ 4 و سماق 102×5/ 3 بوده است. میانگین شمارش اسپورهای مزوفیل و هوازی در نمونه های بسته بندی CFU/g 106×3 و در نمونه های فله و فاقد بسته بندیCFU/g 106×8/4 بوده است. نتایج نشان داد، فلفل قرمز بالاترین و سماق کمترین میزان آلودگی به اسپورهای هوازی را دارا بوده اند. میانگین شمارش باکتری های مزوفیل هوازی در مورد فلفل قرمز و فلفل سیاه، در مقایسه با استاندارد بین المللی(ICMSF) که برای ادویهCFU/g 106 تدوین شده است بالاتر از حد استاندارد بود. نتیجه گیری: اعمال روش های ضدعفونی و استریلیزاسیون با استفاده از اشعه گاما به میزان 10 کیلوگری به منظور سالم سازی و کاهش آلودگی به باکتری های اسپورزا در انواع ادویه ها خصوصا ادویه های مصرف شده به صورت خام ضروری به نظر می رسد.

spices, like most of the agricultural products, is quite important regarding the health and
hygiene. The aim of this research is to evaluate and assess the microbial status of packed and
unpacked spices, in Zanjan city.
Materials and Methods: Total of 80 samples of packed and unpacked spices (black pepper,
red pepper, sumac, cinnamon) were collected randomly from the food supplying centers and
local retail stores in Zanjan city. Experiments were carried out for the presence of aerobic
spores according to the Iranian standards.
Results: Average of total aerobic mesophilic spores count based on CFU/g were 1.6×107 for
red pepper, 6.6×106 for black pepper, 4.3×104 for cinnamon and 3.5×102 for sumac. Averages
of total aerobic mesophilic spore counts for packed and unpacked spices were 3×106 CFU/g
and 8.4×106 CFU/g, respectively. The average loads of total aerobic mesophilic spores were
highest in red pepper and lowest in sumac. Average of total aerobic mesophilic bacteria count
in the red pepper and black pepper as compared to the international standard (ICMSF) were
higher.
Conclusions: It is therefore recommended to apply disinfection and sterilization methods
such as gamma irradiation at the rate of 10 KG to reduce the contamination of the spore
forming bacteria in spices, especially the spices that are consumed without undergoing
cooking process.
