خلاصة:
مقدمه: علیرغم وجود خاصیت آنتی اکسیدانی بالا در ضایعات کاهو، هیچ گزارشی در مورد ارزیابی عصاره آنتی اکسیدانی آن در پایدارسازی روغنهای خوراکی موجود نمی باشد. بنابراین اهداف این پژوهش، بررسی بازیابی عصاره آنتی اکسیدانی از برگ های خارجی کاهو به عنوان ضایعات این محصول از طریق استخراج اولتراسونیک و ارزیابی تاثیر آنتی اکسیداتیو عصاره مذکور بود. 70:30( مواد و روشها: استخراج عصاره آنتی اکسیدانی از نمونه پودر شده ضایعات کاهو به کمک اولتراسوند با حلال اتانول/ آب (وزنی/ حجمی) صورت گرفت. 1:20 کیلو هرتز و نسبت ماده جامد به حلال 40 دقیقه، فرکانس 30 زمان،50 ˚C حجمی/ حجمی) در دمای IC راندمان استخراج، مقدار ترکیبات فنولیک کل و عصاره تعیین شد، سپس عصاره به روغن تالواولئین افزوده شد. آثار حفاظتی غلظت 50 ) در پایدارسازی روغن تالواولئین از طریق پایش تغییرات اندیسهای پراکسید، ppm2000 و 1000 ،800، 400، 0( های مختلف عصاره ارزیابی و فعالیت آنتی اکسیدانی غلظت های مختلف ، توتوکس و نیز شاخص پایداری اکسیداتیو تحت اکسیداسیون تسریع یافته ،پاراآنیزیدین عصاره در پایدارسازی روغن تالواولئین با آنتی اکسیدان ) مقایسه گردید. 200 ppm( BHT وBHA های سنتتیک IC یافته ها: راندمان استخراج، مقدار ترکیبات فنولیک کل و (mg ،30/45 ±1/20% عصاره به ترتیب 50 GAE /100g DW) 29/6 ± ) دارای عملکردی به خوبی 2000 ppm تعیین شد. نتایج نشان داد که این عصاره آنتی اکسیدانی (در غلظت 174/05ppm و 600/15 ) در به تاخیر انداختن فساد اکسیداتیو تالواولئین می باشد. 200 ppm( BHT آنتیاکسیدان نتیجه گیری: عصاره آنتی اکسیدانی ضایعات کاهو می تواند به عنوان آنتی اکسیدان طبیعی جهت به تاخیر انداختن سرعت اکسیداسیون روغنهای خوراکی مورد استفاده قرار گیرد
Introduction: In spite of the high antioxidant activity in lettuce wastes, there is not any reports on the application of the antioxidant extract from lettuce wastes to stabilize the edible oils. The aims of this study were to investigate the recovery of antioxidant extract from outer leaves of lettuce as the wastes via ultrasonic extraction and evaluate the antioxidative effect of the extract.
Materials and Methods: The powdered lettuce sample was extracted with ethanol/H2O (70:30, V/V) using ultrasonic extraction at the temperature of 50˚C and time of 30 minutes with the frequency of 40 KHZ and solid to solvent ratio of 1:20 (w/v) in an ultrasound water bath. The extractive yield, total phenolic compound (TPC) and IC50 were determined. The yielded extract was added to tallow olein in order to study its stabilizing effect. The protective effects of the extracts at different concentrations were evaluated by monitoring the peroxide, p-anisidine, totox values and oxidative stability index levels under accelerated oxidation. The antioxidant activities of the extract of the lettuce wastes at different concentrations to stabilise tallow olein were compared to BHA and BHT at 200 ppm concentration.
Results: The extractive yield, TPC and IC50 were 30.45 ± 1.20 (%), 600.15 ± 6.29 (mg GAE /100g DW) and 174.05 ppm, respectively. The results indicated that the extract at 2000 ppm have a good activity as compared to BHT at 200 ppm.
Conclusion: The antioxidant extract of the lettuce wastes might used as a natural antioxidant in retarding the oxidation rate of edible oils.
